Delicious and Easy Salmon Patties – A Weeknight Favorite
If you're looking for a quick and tasty weeknight meal, salmon patties are a perfect go-to. They’re simple to make, packed with flavor, and a great way to incorporate more fish into your diet. This is my no-fuss recipe, and though I don’t use exact measurements, it’s a tried-and-true method that works every time.
I like to call this my "country meal" because it comes straight from my Kentucky roots. Born and raised in eastern Kentucky, I’ve lived in Ohio for over 30 years now, but these dishes take me back to my home state every time I make them.
I don’t follow a specific recipe, but here's how I put mine together. I always start by using the same bowl I mixed my cornbread batter in (waste not, want not, right?), leaving just a tiny bit of the batter at the bottom for extra flavor.
Ingredients:
1 can of salmon, drained (remove skin and bones as much as you prefer, though they are edible)
2 eggs
½ sleeve of crushed saltine crackers
½ cup shredded cheese (any kind you have on hand works)
Instructions:
Prepare the Salmon: Drain your can of salmon over the sink. I like to remove as much skin and as many bones as I can, though it’s totally optional. The bones are soft and completely edible, so feel free to leave them in if that doesn’t bother you.
Mix the Ingredients: In a mixing bowl (I use the same bowl I made my cornbread in-I leave a little of the cornbread batter in the bottom, this is completely optional), add the drained salmon, eggs, crushed crackers, and shredded cheese. Mix everything together by hand until fully combined.
Form Patties: Once everything is well mixed, shape the mixture into patties. The size is up to you, but I usually go for smaller patties that are easy to handle. You may want yours larger and thicker, this works too!
Fry the Patties: Heat a little oil in a skillet over medium heat. Once the oil is hot, carefully place the patties into the skillet and fry until they’re golden brown on both sides. It doesn’t take long, and they’re done in no time!
Serve and Enjoy: Serve these crispy salmon patties with your favorite sides. Last night, I paired them with fried potatoes, canned greens, canned soup beans, and homemade cornbread.
Other sides I like to make with salmon patties include my homemade mac n’ cheese (you can find the recipe here on my blog) and canned Glory Foods seasoned greens for a quick but flavorful option. Also, My “Aunt” Bertie Castle, used to serve her salmon patties with mashed potatoes and peas! This is also really good!
A Little Tip:
Homemade soup beans are always best, but when you’re in a pinch on a busy weeknight, you can’t go wrong with Glory Foods seasoned pinto beans with onion or Lucks brand pinto beans. I often mix the two together for extra flavor!

Salmon patties might not sound glamorous (and yes, the smell when you open that can can be a little strong), but trust me, they’re worth it.
